Ingredients
  

Zucchini

  • 2 medium zucchini sliced into 1/4-inch rounds

Seasoning

  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning

Cheese and Garnish

  • 1 cup shredded mozzarella cheese
  • 1/4 cup finely grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions
 

  • Preheat the oven to 425°F. Lightly grease a baking sheet or shallow baking dish.
  • Slice the zucchini into even 1/4-inch rounds.
  • In a mixing bowl, toss the zucchini rounds with olive oil, kosher salt, black pepper, garlic powder, and Italian seasoning until evenly coated.
  • Arrange the zucchini in a single layer on the prepared baking sheet or dish.
  • Top the zucchini rounds with the mozzarella cheese and sprinkle the Parmesan over the top.
  • Bake for 15 to 20 minutes, until the zucchini is tender and the cheese is melted and golden in spots.
  • For deeper browning, broil for 1 to 2 minutes at the end, watching closely.
  • Sprinkle with chopped parsley and serve hot.

Notes

Cut the zucchini evenly and avoid overcrowding the pan so it bakes instead of steaming. Add the cheese just before baking if prepping ahead. Broil briefly at the end for extra golden color, but watch closely.
