Ingredients
  

For the peach filling

  • 6 cups fresh peaches peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt

For the crisp topping

  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup light brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted

Instructions
 

Prepare the filling

  • Preheat the oven to 350°F and lightly grease a 9-inch round or 8x8-inch baking dish.
  • Place the peeled and sliced peaches in a large mixing bowl.
  • Add the granulated sugar, flour, lemon juice, vanilla extract, cinnamon, and salt. Toss gently until the peaches are evenly coated.
  • Transfer the peach mixture to the prepared baking dish and spread into an even layer.

Make the topping

  • In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt.
  • Pour in the melted butter and stir with a fork until the topping is evenly moistened and crumbly.

Assemble and bake

  • Sprinkle the topping evenly over the peaches without pressing it down.
  • Bake for 35 to 40 minutes, until the filling is bubbling around the edges and the topping is golden brown.
  • Cool for 10 to 15 minutes before serving.

Notes

Use ripe but firm peaches for the best texture. If the peaches are very juicy, add 1 extra tablespoon flour to the filling. Frozen peaches can be used if thawed and drained well. Refrigerate leftovers promptly and reheat before serving.
