  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt

Wet Ingredients

  • 2 large eggs
  • 1 3/4 cups whole milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract

For Cooking and Serving

  • 1 small amount butter for greasing the pan if needed
  • 1 to taste maple syrup for serving
  • 1 to taste butter for serving

Instructions
 

Make the Batter

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
  • In a separate bowl or large measuring jug, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently just until combined. A few small lumps are fine; do not overmix.
  • Let the batter rest for 5 minutes.

Cook the Pancakes

  • Heat a nonstick skillet or griddle over medium heat and lightly grease with butter if needed.
  • Scoop about 1/4 cup of batter per pancake onto the hot skillet, leaving space between each pancake.
  • Cook for 2 to 3 minutes, until bubbles form on the surface and the edges look set.
  • Flip and cook for 1 to 2 minutes more, until golden brown and cooked through.
  • Transfer to a plate or warm oven and repeat with the remaining batter.
  • Serve warm with butter and maple syrup.

Notes

Do not overmix the batter; a few lumps help keep the pancakes fluffy. Let the batter rest 5 minutes before cooking. Cook over medium heat for even browning, and keep finished pancakes warm in a low oven if needed.
