Equipment

Ingredients
  

For the cookies

  • 1 cup unsalted butter softened
  • 3/4 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups apple peeled and finely diced

For the glaze

  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 1 pinch ground cinnamon optional

Instructions
 

  • Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Add the dry ingredients to the wet ingredients and mix just until combined.
  • Stir in the rolled oats, then gently fold in the finely diced apple until evenly distributed. The dough will be thick.
  • Scoop heaping tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  • Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are set.
  • Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  • To make the glaze, whisk together the powdered sugar, milk, vanilla extract, and optional cinnamon until smooth and drizzleable.
  • Drizzle the glaze over the completely cooled cookies and let it set before serving or storing.

Notes

Dice the apple small for even baking. Pat very juicy apple pieces dry before adding to the dough. For best texture, use old-fashioned rolled oats. Store in an airtight container and refrigerate after a few days because of the fresh apple.
